A yummy new recipe!

One guideline for cooking we've followed is to use the least amount of pots/pans and the least amount of fuel for cooking as possible. It saves time and money on iso-butane canisters. Madi made an adaptation to a Mediterranean bowl recipe that follows this guideline and it was delicious!

Green pepper keifer dressing (variation on cucumber yogurt):
The amount of each ingredient will depend on how much you want to make and what your desired flavor level is. We do not measure when cooking. Madi just added a little of the spices at a time and taste until it's delicious!

Non-flavored probiotic keifer
Olive oil
Lime juice
Finely chopped fresh garlic
Cubed green pepper
Salt
Black pepper
Parsley
Oregano
Thyme
Mix all together until desired taste.
Falafel and veggies:

We used the boxed falafel from Trader Joe's and just followed the directions on the box. It's super easy to make. We let this one sit for two hours in the fridge because we had extra time earlier in the afternoon between Madi's school meetings.
After cooking the falafel balls, we added the rest of the green pepper and some sweet onions. IMadi cooked these in the olive oil remaining from the falafel and added the same spices as the sauce (pepper, salt, thyme, oregano, and parsley).
Mix with the dressing and enjoy!
